Snickerdoodle Banana Pudding

INGREDIENTS
BANANA PUDDING
- 2 ripe bananas
- 4 tbsp arrowroot starch
- 1 can full-fat coconut milk
- 1 tsp cinnamon
- 2-4 tbsp coconut sugar
- Pinch of salt
FOR SERVING
- Coconut whipped cream
- Sliced bananas
- Hu Grain-Free Snickerdoodle Cookies
INSTRUCTIONS
- Blend all the pudding ingredients until smooth and creamy.
- Pour into a saucepan, and cook over medium heat for 10-12 minutes stirring frequently until thickened.
- Transfer to a heat-proof bowl, cover with plastic wrap (touching the pudding to prevent a layer from forming on top), and chill at least 4 hours.
- Layer: coconut whipped cream, cookies, pudding, sliced bananas, repeat.
