Snickerdoodle Banana Pudding

Simple and healthy banana pudding with the ultimate Hu Grain-Free Cookies crunch. Enjoy every bite of heavenly cinnamon and vanilla flavors.



    • 2 ripe bananas

    • 4 tbsp arrowroot starch

    • 1 can full-fat coconut milk

    • 1 tsp cinnamon

    • 2-4 tbsp coconut sugar

    • Pinch of salt


  1. Blend all the pudding ingredients until smooth and creamy. 
  2. Pour into a saucepan, and cook over medium heat for 10-12 minutes stirring frequently until thickened.
  3. Transfer to a heat-proof bowl, cover with plastic wrap (touching the pudding to prevent a layer from forming on top), and chill at least 4 hours. 
  4. Layer: coconut whipped cream, cookies, pudding, sliced bananas, repeat.
  5. And enjoy!
