Paleo Chocolate Chip Cookies

Paleo Chocolate Chip Cookies                     

prep: 10 min | cook: 10 min | inactive: 15 min | total: 35 min

1. Preheat oven to 375 degrees F
2. Line a large baking sheet with parchment paper
3. In a large mixing bowl, whisk together 1/4 cup + 1 tablespoon of pure Vt. maple syrup, 1 teaspoon organic vanilla and 3 tablespoons organic coconut oil until well combined
4. In a separate bowl, combine 1 cup of King Arthur Paleo Flour, 1/2 teaspoon baking soda, and 1/4 teaspoon sea salt
5. Add dry ingredients to wet ingredients and combine using Hu spatula until batter is thick
6. Fold in at least 1/3 cup of Hu Gems, but the more the merrier. Cover bowl and chill for 30 minutes
7. Scoop using medium sized cookie scooper and place onto parchment paper leaving room for them to spread out
8. Bake for 10-15 minutes, or until edges are golden brown, then let cool for up to 20 minutes
Pro-Tip: add a square of Hu Salty bar to each cookie when taken out of the oven. Watching them melt in the center is just as incredible as the addition of the salty chocolate
