No-Bake Hu Cookies and Cream Cheesecake

No-bake cheesecake that's sure to make you wanting more. With Hu Grain-Free Chocolate Chip Cookies, cashews, and a touch of maple syrup, this simple, paleo-friendly recipe elevates the dairy-free classic.

INSTRUCTIONS

  1. Blend the Hu Grain-Free Cookies for the crust in a food processor to fine crumbs.
  2. Add coconut oil and blend again until clumpy.
  3. Press into a 8x8" pan lined with parchment paper. Freeze.
  4. Drain and rinse the cashews. Blend with coconut milk, maple syrup, coconut oil, and lemon juice until very smooth and creamy.
  5. Crush the remaining cookies and gently fold them in.
  6. Pour on top of the crust (top with more cookies!), and freeze overnight.
  7. Slice and eat!
