Hu No Added Sugar Chocolate Chip Cookies
Big bakery-style chocolate chip cookies (but healthier!) Thick and chewy made with cashew butter, cassava flour, and dark chocolate. Vegan and paleo!
This paleo chocolate chip recipe features our NEW No Added Sugar Keto Baking Chocolate Chips. These are unlike any other chocolate chip out there right now, sweetened with pure fruit (dates!) and no sugar alcohols or lecithins. Finally - a keto chocolate chip without the weird ingredients.
These are delicious, chocolatey cookies, that rise and spread and puff and turn golden cookies, deserving of a flakey salt sprinkle cookies, hunky handful of a cookie cookies. We are breaking out the big cookie scoop and the best semi-sweet keto chocolate chips and turning the oven temp up a little and creating the ultimate THICK and CHEWY Chocolate Chip Cookies.
Ingredients:
1/2 cup (125g) almond butter
1/4 cup (80g) maple syrup
1/4 cup (35g) coconut sugar
1/4 cup (50g) coconut oil
1 tsp vanilla
1/2 cup + 2 tbsp (70g) almond flour
1/4 cup (30g) cassava flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup (80g) Hu No Sugar Added Chocolate Chips
- Preheat the oven to 350°F.
- Whisk together almond butter, maple syrup, coconut sugar, coconut oil, and vanilla.
- Add flour, baking soda, and salt. Mix to combine.
- Fold in chocolate chips (saving a few for on top).
- Scoop/roll into balls (about 2 tbsp per cookie) and arrange on a baking sheet lined with parchment paper leaving some room for spreading. Top each with a few extra chocolate chips, and press lightly to flatten.
- Bake for 12-14 minutes at 350°F.
- Cool 10 minutes on the pan, then transfer to a cooling rack to cool completely.
