CASHEW BUTTER DARK CHOCOLATE GANACHE TART

Serves 16 bars

A delicious vegan cashew butter dark chocolate ganache tart - with a raspberry twist. Vegan, grain-free, and easy to make! 


INGREDIENTS

CRUST

  • 2 cups almond flour
  • 2 tbsp maple syrup
  • 2 tbsp melted coconut oil 
  • 3 tbsp cacao powder
  • 1/4 tsp vanilla

FILLING

  • 1 cup cashew butter
  • 2 1/2 tbsp maple syrup
  • 1/2 tsp sea salt
  • 2 tbsp coconut flour 
  • 2 tbsp melted coconut oil

CRUST

INSTRUCTIONS

  1. Mix all crusts ingredients until combined. Press into a prepared pan.
  2. To make the filling, combine all ingredients into a bowl, besides coconut flour. Mix until completely smooth and add the coconut flour 1 tbsp at a time, to allow it to slightly thicken.
  3. Spread over the crust. 
  4. Melt the Hu chocolate bar and coconut oil together until completely smooth.
  5. Pour over the cashew butter filling. At this point, drizzle a little melted cashew butter around the chocolate. 
  6. Place in fridge to set. Enjoy!
